San Venanzo – La Sella

A typical product of the town of San Venanzo following the best regional pork butchery tradition. The “Sella di San Venanzo” is obtained from the skilful processing of the pork loin with part of the fat attached, carefully trimmed and flavored with various spices. Then it is aged (about 5 months) before the finished product is ready for consumption. The Sella di San Venanzo is locally served with the equally characteristic Umbrian “torta al testo” (a sort of unsalted white focaccia cooked on a stone support called the “testo”).
